- 2 tbsp oil (vegetable or sesame)
Fresh veggies (mix & match):
- 1 bell pepper (sliced)
- 1 cup broccoli florets
- 1 carrot (thinly sliced)
- 1 cup snap peas or green beans
- 1 small onion (sliced)
Sauce:
- 3 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- 1 tbsp cornstarch
- ½ cup water or beef broth
- 1 tbsp honey or brown sugar
- 2 cloves garlic (minced)
- 1 tsp ginger (optional)
Instructions
1. Prep the beef
- Slice thinly against the grain (this keeps it tender)
- Toss lightly with a little soy sauce and cornstarch (optional for extra tenderness)
2. Cook the beef
- Heat oil in a wok or large pan over high heat
- Sear beef quickly (2–3 minutes) until browned
- Remove and set aside
3. Stir-fry veggies
- In the same pan, add a bit more oil
- Cook harder veggies first (carrots, broccoli)
- Then add softer ones (peppers, onions, snap peas)
- Stir-fry for 3–5 minutes until crisp-tender
4. Make the sauce
- Add garlic and ginger, cook briefly
- Pour in sauce mixture
- Let it simmer and thicken
5. Combine
- Return beef to the pan
- Toss everything until coated and heated through
Serve With
- Steamed rice
- Noodles
- Fried rice or cauliflower rice
Pro Tips
- High heat = best stir-fry flavor
- Don’t overcrowd the pan
- Prep everything before cooking (it goes fast!)
- Use day-old rice if serving with fried rice
Variations
- Spicy: Add chili sauce or flakes
- Garlic-heavy: Double the garlic
- Low-carb: Skip sugar and serve with veggies only
- Teriyaki twist: Swap sauce for teriyaki
