Ingredients
- 500g (1 lb) small shrimp (peeled & deveined, tails off)
- 1 cup buttermilk (or milk + 1 tbsp vinegar)
- 1 cup all-purpose flour
- ½ cup cornmeal (optional, for extra crunch)
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp cayenne pepper (optional)
- Salt & black pepper (to taste)
- Oil for frying
Instructions
1. Marinate
- Soak shrimp in buttermilk for 20–30 minutes (makes them tender and flavorful)
2. Prepare coating
- Mix flour, cornmeal, and all seasonings in a bowl
3. Coat
- Remove shrimp from buttermilk
- Dredge in flour mixture (press lightly so coating sticks)
4. Fry
- Heat oil to 175°C (350°F)
- Fry shrimp in small batches for 2–3 minutes until golden and crispy
5. Drain
- Place on paper towels and lightly salt

- Don’t overcook—shrimp cook very fast
- Keep oil temperature steady for best crispiness
- Double-coat (dip again in buttermilk, then flour) for extra crunch
- Use small shrimp for true “popcorn” size
