Baked Chicken, Rice & Vegetables
Ingredients
For the chicken

2 chicken breasts or thighs

2 tbsp olive oil
-
1 tsp salt
-
½ tsp black pepper
-
1 tsp paprika
-
1 tsp garlic powder
-
½ tsp dried oregano
-
½ tsp chili flakes (optional)
For the rice
-
1 cup rice
-
2 cups water or chicken broth
-
½ tsp salt
For the vegetables
-
1 cup broccoli
-
1 carrot (sliced)
-
1 bell pepper (sliced)
-
1 tbsp olive oil
-
Pinch of salt and pepper
Instructions
1. Bake the Chicken

Preheat oven to 200°C (400°F).

Rub chicken with olive oil and all the spices.

Place in a baking dish or tray.
-
Bake for 20–25 minutes until fully cooked.
2. Cook the Rice
-
Wash the rice.
-
Add rice, water (or broth), and salt to a pot.
-
Bring to a boil, then cover and cook on low heat for 15 minutes.
3. Roast the Vegetables
-
Toss vegetables with olive oil, salt, and pepper.
-
Spread on a tray.
-
Roast in the oven for 15–20 minutes.
4. Serve
Plate the rice, top with baked chicken, and add roasted vegetables on the side.

Add soy sauce or garlic sauce to the vegetables.
