Mango Chicken Curry in a Slow Cooker
This dish combines sweet mango with warm curry spices and tender chicken. Using a slow cooker makes the chicken very soft and allows the flavors to blend beautifully.
Ingredients

500–700 g chicken (boneless thighs or breast)

1 cup mango puree (fresh or canned)

1 onion, finely chopped

3 cloves garlic, minced

1 tbsp grated ginger

1–2 tbsp curry powder

1 tsp turmeric (optional)

1 tsp chili powder or paprika (optional)

1 cup coconut milk

1 tbsp tomato paste

Salt and pepper to taste

1 tbsp oil

Fresh cilantro for garnish
Slow Cooker Instructions

Prepare the base

In a bowl mix: mango puree, coconut milk, curry powder, turmeric, chili powder, tomato paste, salt, and pepper.

Add to slow cooker

Place chicken in the slow cooker.

Add onion, garlic, and ginger.

Pour the mango curry mixture over the chicken.

Low: 6–7 hours

High: 3–4 hours

Stir gently and taste for seasoning.

Tips

Add diced fresh mango near the end for extra sweetness.

If you want it spicier, add chopped green chilies.
