Classic Homemade Pie (All-Purpose Recipe)
This is a buttery, flaky crust with a simple fruit filling — works great for apple, blueberry, cherry, or peach.
Ingredients (9-inch pie)
Pie Crust (Double Crust)

2½ cups all-purpose flour

1 tsp salt

1 tbsp sugar

1 cup (2 sticks) cold unsalted butter, cubed

6–8 tbsp ice water
Fruit Filling (Example: Apple)

6 cups sliced fruit (apples, berries, peaches, etc.)

¾ cup sugar (adjust for sweetness of fruit)

2–3 tbsp cornstarch (thickener)

1 tsp cinnamon (optional)

1 tbsp lemon juice
-
1 tsp vanilla extract
Instructions
1️⃣ Make the crust

Mix flour, salt, and sugar.

Cut in cold butter until mixture looks like coarse crumbs.

Add ice water 1 tbsp at a time until dough just comes together.

Divide into 2 discs, wrap, and chill 30–60 minutes.
2️⃣ Prepare filling

Toss fruit with sugar, cornstarch, lemon juice, vanilla, and spices.
3️⃣ Assemble

Roll out first dough disc and place in pie dish.

Add filling.

Roll out second disc and place on top (solid crust or lattice).

Crimp edges and cut slits if using full top crust.
4️⃣ Bake

400°F (200°C) for 20 minutes.

Reduce to 375°F (190°C) and bake 30–40 more minutes until golden and bubbly.
Cool at least 2 hours before slicing for clean cuts.
Pro Tips

Keep butter and water very cold for flakiness.

Brush top with egg wash + sprinkle sugar for shine.

If edges brown too fast, cover loosely with foil.
