Ingredients (Serves 2)

4 slices thick-cut bread (sourdough or Texas toast works great)

6–8 slices crispy bacon

1 cup shredded sharp cheddar cheese

4 slices provolone or mozzarella

½ cup dill pickle slices (patted dry)

2 tbsp softened butter (or mayo for crispier crust)

1 tbsp Dijon or spicy mustard (optional)

1 tbsp chopped fresh dill (optional, for extra pickle punch)
Instructions

Cook the bacon
Fry until crispy, then drain on paper towels. -
Prep the bread
Spread butter (or mayo) on one side of each slice.
On the inside (non-buttered side), spread a thin layer of Dijon if using. -
Layer it up
On two slices (buttered side down):-
Provolone or mozzarella

Cheddar

Sprinkle of fresh dill
Top with remaining bread (buttered side up).
