Gluten-Free No-Knead Bread
This Gluten-Free No-Knead Bread is soft, fluffy, and easy to make with no kneading required. It has a beautifully golden crust, a tender interior, and is perfect for sandwiches, toast, or serving alongside soups and stews.
Ingredients
- 3 cups (360 g) gluten-free all-purpose flour blend (with xanthan gum)
- 2¼ tsp (1 packet) instant yeast
- 1 tbsp granulated sugar or honey
- 1 tsp salt
- 1¼ cups (300 ml) warm water (110°F/43°C)
- 2 tbsp olive oil
- 2 large eggs, room temperature
- 1 tsp apple cider vinegar

Instructions
- In a large bowl, whisk together the gluten-free flour, yeast, sugar, and salt.
- Add the warm water, olive oil, eggs, and apple cider vinegar.
- Stir with a wooden spoon or spatula until a thick, smooth batter forms. Gluten-free bread dough is softer than traditional wheat dough, so no kneading is required.
- Cover the bowl with plastic wrap or a clean kitchen towel and let the batter rise in a warm place for 45–60 minutes, or until nearly doubled in size.
- Lightly grease a 9×5-inch (23×13 cm) loaf pan or line it with parchment paper.
- Spoon the batter into the prepared pan and smooth the top with a wet spatula.
- Sprinkle with your choice of seeds or oats, if using.
- Preheat the oven to 375°F (190°C).
- Bake for 40–45 minutes, or until the loaf is golden brown and the internal temperature reaches 205°F (96°C).
- Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Tips
- Use a quality gluten-free flour blend that already contains xanthan gum. If yours doesn’t, add 1 teaspoon xanthan gum.
- Weigh the flour for the most accurate results.
- Allow the bread to cool completely before slicing to avoid a gummy texture.
