Ingredients
- 4 large eggs, separated
- 4 oz (115 g) cream cheese, softened
- ½ cup (100 g) granulated sugar

Instructions
- Preheat the oven to 300°F (150°C). Grease and line a 6-inch (15 cm) round cake pan with parchment paper.
- In a large bowl, beat the softened cream cheese until smooth.
- Add the egg yolks one at a time, mixing well after each addition until the batter is silky.
- In a separate clean bowl, beat the egg whites until foamy. Gradually add the sugar and continue beating until stiff, glossy peaks form.
- Gently fold one-third of the whipped egg whites into the cream cheese mixture to lighten it.
- Carefully fold in the remaining egg whites in two additions, using a spatula to preserve as much air as possible.
- Pour the batter into the prepared pan and gently tap the pan once to release any large air bubbles.
- Place the cake pan inside a larger baking pan. Pour hot water into the larger pan until it reaches about 1 inch (2.5 cm) up the sides of the cake pan (a water bath).
- Bake for 45–50 minutes, or until the top is lightly golden and the center is just set.
- Turn off the oven, crack the oven door open slightly, and let the cake cool inside for 15 minutes to help prevent cracking.
- Remove from the oven, cool completely, then refrigerate for 1–2 hours before serving.
- Dust with powdered sugar and garnish with fresh berries if desired.
