Ingredients
- 8 oz (225 g) cooked chicken breast, turkey breast, or lean ham, cut into bite-sized cubes
- 8 oz (225 g) mozzarella balls (bocconcini or ciliegine)
- 1 cup cherry tomatoes
- ½ English cucumber, sliced into thick rounds
- ½ cup green or black olives
- Fresh basil leaves
Optional Add-Ins
- Roasted red peppers, cut into squares
- Dill pickles
- Salami slices (for a higher-fat option)
- Cubed cheddar or pepper jack cheese
Dressing (Optional)
- 1 tbsp olive oil
- 1 tsp lemon juice
- ½ tsp Italian seasoning
- Pinch of black pepper
Instructions
- If using the dressing, whisk together the olive oil, lemon juice, Italian seasoning, and black pepper.
- Assemble each cocktail stick by threading:
- 1 cherry tomato
- 1 basil leaf
- 1 mozzarella ball
- 1 cube of chicken, turkey, or ham
- 1 cucumber slice
- 1 olive
- Arrange the skewers on a serving platter.
- Drizzle lightly with the dressing, if desired.
