Ingredients
- 2 cups (180 g) old-fashioned rolled oats
- 1 tsp baking powder
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp salt
- 2 medium apples, peeled and grated
- 1 cup grated carrot
- 2 large eggs
- 1½ cups (360 ml) milk (dairy or unsweetened almond milk)
- ¼ cup (60 ml) maple syrup or honey
- 1 tsp vanilla extract
- 2 tbsp melted butter or coconut oil
Optional Add-Ins
- ¼ cup chopped walnuts or pecans
- 2 tbsp raisins or dried cranberries
- 1 tbsp chia seeds
- Pumpkin seeds for topping
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8-inch (20×20 cm) baking dish.
- In a large bowl, mix the oats, baking powder, cinnamon, nutmeg, and salt.
- Stir in the grated apples and carrots.
- In another bowl, whisk together the eggs, milk, maple syrup, vanilla, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until well combined. Fold in any optional add-ins.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Sprinkle with pumpkin seeds or extra oats, if desired.
- Bake for 35–40 minutes, or until the center is set and the top is lightly golden.
- Let cool for 10 minutes before slicing and serving.
