Ingredients

Instructions
- Crack the eggs into a bowl. Add the Greek yogurt, salt, and black pepper.
- Whisk vigorously for 30–60 seconds until the mixture is smooth and slightly frothy.
- Heat a nonstick skillet over low heat and add the olive oil or butter.
- Pour in the egg mixture.
- Using a silicone spatula, gently stir the eggs from the edges toward the center in slow, sweeping motions.
- Continue stirring gently for 3–5 minutes, removing the pan from the heat for a few seconds if the eggs begin cooking too quickly.
- When the eggs are mostly set but still slightly glossy, remove the skillet from the heat. The residual heat will finish cooking them.
- Sprinkle with fresh herbs and serve immediately.
