Ingredients
For the Nougat
- 1 cup (240 g) natural almond butter
- ¼ cup (60 g) unsalted butter
- ¼ cup (60 ml) heavy cream
- ⅓ cup powdered erythritol or monk fruit sweetener
- 1 tsp vanilla extract
- Pinch of salt
For the Chocolate Topping
- 1 cup (170 g) sugar-free dark chocolate chips
- 1 tbsp coconut oil

- ¼ cup chopped pecans or almonds
- 2 tbsp unsweetened shredded coconut
- 1 tbsp cacao nibs
- Flaky sea salt
Instructions
- Line an 8×8-inch pan or loaf pan with parchment paper.
- In a saucepan over low heat, melt the almond butter, butter, and heavy cream until smooth.
- Stir in the powdered sweetener, vanilla extract, and salt until fully combined.
- Fold in the nuts or coconut, if using.
- Spread the mixture evenly into the prepared pan and smooth the top.
- Refrigerate for 30–45 minutes, or until firm.
- Melt the sugar-free chocolate chips with the coconut oil in the microwave in 20-second intervals, stirring until smooth.
- Pour the melted chocolate over the chilled nougat layer and spread evenly.
- Sprinkle with flaky sea salt, if desired.
- Refrigerate for another 30 minutes, or until the chocolate is set.
