These Creamy Healthy Soft Scrambled Eggs are silky, fluffy, and packed with protein. Cooked gently over low heat, they stay moist and tender without needing heavy cream, making them a wholesome breakfast that’s ready in minutes.
Ingredients
- 4 large eggs
- 2 tbsp milk or unsweetened Greek yogurt
- 1 tsp olive oil or 1 tsp butter
- ¼ tsp salt
- ¼ tsp black pepper
- 1 tbsp chopped fresh chives or parsley (optional)
Optional Add-Ins
- Baby spinach
- Diced tomatoes
- Sautéed mushrooms
- Avocado slices
- Crumbled feta cheese
Instructions
- Crack the eggs into a bowl and add the milk (or Greek yogurt), salt, and black pepper.
- Whisk vigorously for 30–60 seconds until the mixture is light and well combined.
- Heat a nonstick skillet over low heat and add the olive oil or butter.
- Pour in the egg mixture.
- Using a silicone spatula, gently stir the eggs in slow, sweeping motions, pushing them from the edges toward the center.
- Continue cooking for 3–5 minutes, removing the pan from the heat briefly if the eggs begin to cook too quickly.
- When the eggs are mostly set but still slightly glossy, remove them from the heat. The residual heat will finish cooking them.
- Sprinkle with fresh chives or parsley and serve immediately.
Tips
- Low heat is the key to creamy, tender scrambled eggs.
- Avoid overcooking—the eggs should still look slightly glossy when you take them off the heat.
- Greek yogurt adds extra protein and creaminess without making the eggs heavy.
- Season just before or during whisking for evenly flavored eggs.
