No-Knead Gluten-Free Bread
This No-Knead Gluten-Free Bread is soft on the inside with a beautifully golden crust. Made with a gluten-free flour blend, it’s easy to prepare—no kneading required—and perfect for sandwiches, toast, or serving alongside soups and stews.
Ingredients
- 3 cups (360 g) gluten-free all-purpose flour blend (with xanthan gum)
- 2¼ tsp (1 packet) instant yeast
- 1 tbsp granulated sugar or honey
- 1 tsp salt
- 1¼ cups (300 ml) warm water (105–110°F / 40–43°C)
- 2 tbsp olive oil
- 2 large eggs, room temperature
- 1 tsp apple cider vinegar

Instructions
- Lightly grease a 9×5-inch (23×13 cm) loaf pan and line it with parchment paper if desired.
- In a large bowl, whisk together the gluten-free flour, yeast, sugar, and salt.
- In a separate bowl, whisk together the warm water, olive oil, eggs, and apple cider vinegar.
- Pour the wet ingredients into the dry ingredients and mix with a wooden spoon or hand mixer until a thick, sticky batter forms. Gluten-free bread dough will be softer than traditional bread dough.
- Spread the batter evenly into the prepared loaf pan and smooth the top with a damp spatula.
- Cover loosely with a clean kitchen towel or plastic wrap and let rise in a warm place for 45–60 minutes, or until the dough has increased by about 50%.
- Preheat the oven to 375°F (190°C).
- Sprinkle with gluten-free oats or seeds if desired.
- Bake for 45–50 minutes, or until the loaf is golden brown and the internal temperature reaches 205°F (96°C).
- Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Tips
- Use a high-quality gluten-free flour blend that already contains xanthan gum. If yours doesn’t, add 1 teaspoon xanthan gum.
- Measuring by weight gives the most consistent results.
- Let the loaf cool completely before slicing to help it set properly.
