Air Fryer Fruit Scones
These Air Fryer Fruit Scones are light, fluffy, and filled with juicy raisins or mixed dried fruit. They bake up beautifully golden in the air fryer and are perfect for breakfast, afternoon tea, or a quick snack.
Ingredients
- 2 cups (250 g) self-rising flour
- ¼ cup (50 g) granulated sugar
- ¼ tsp salt
- ¼ cup (55 g) cold unsalted butter, cubed
- ½ cup (75 g) raisins, sultanas, or mixed dried fruit
- ⅔ cup (160 ml) whole milk
- 1 large egg
- 1 tsp vanilla extract
For the Topping
- 1 tbsp milk
- Coarse sugar (optional)
To Serve
- Butter
- Strawberry jam
- Clotted cream (optional)
Instructions
- Preheat the air fryer to 330°F (165°C) for 3 minutes.
- In a large bowl, whisk together the self-rising flour, sugar, and salt.
- Rub the cold butter into the flour using your fingertips until the mixture resembles coarse crumbs.
- Stir in the dried fruit.
- In a small bowl, whisk together the milk, egg, and vanilla.
- Pour the wet ingredients into the dry ingredients and stir gently until a soft dough forms. Do not overmix.
- Turn the dough onto a lightly floured surface and gently pat it into a 1-inch-thick round.
- Cut into 8 wedges or use a round biscuit cutter.
- Place the scones into the air fryer basket, leaving a little space between each one.
- Brush the tops with the milk and sprinkle with coarse sugar, if desired.
- Air fry at 330°F (165°C) for 12–15 minutes, or until the scones are golden brown and cooked through.
- Let cool for 5 minutes, then serve warm with butter, jam, or clotted cream.
Tips
- Keep the butter cold for light, flaky scones.
- Soak the dried fruit in warm water for 10 minutes, then drain and pat dry for extra plump fruit.
- Avoid overworking the dough to keep the scones tender.
- Air fryer models vary, so start checking for doneness after 10–11 minutes.
