Broccoli Croquettes
These crispy broccoli croquettes are packed with tender broccoli, cheese, and savory seasonings. They’re golden on the outside, soft on the inside, and perfect as an appetizer, snack, or side dish.
Ingredients
- 3 cups cooked broccoli florets, finely chopped
- 2 large eggs
- 1 cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- ¾ cup panko breadcrumbs (plus extra for coating)
- 2 tbsp finely chopped onion
- 2 cloves garlic, minced
- 1 tsp dried parsley
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp olive oil (for pan-frying) or cooking spray (for baking/air frying)
Instructions
- Steam or boil the broccoli until tender, then drain well and finely chop. Pat dry with paper towels to remove excess moisture.
- In a large bowl, combine the broccoli, eggs, cheddar, Parmesan, breadcrumbs, onion, garlic, parsley, paprika, salt, and pepper. Mix until well combined.
- Shape the mixture into 10–12 small patties or oval croquettes.
- Lightly coat each croquette with additional panko breadcrumbs.
Pan-Fry Method
- Heat the olive oil in a large skillet over medium heat.
- Cook the croquettes for 3–4 minutes per side, until golden brown and crispy.
Air Fryer Method
- Preheat the air fryer to 375°F (190°C).
- Lightly spray the croquettes with cooking spray.
- Air fry for 10–12 minutes, flipping halfway through, until crisp and golden.
Oven Method
- Preheat the oven to 400°F (200°C).
- Place the croquettes on a parchment-lined baking sheet and lightly spray with cooking oil.
- Bake for 20–25 minutes, flipping halfway through.
Tips
- Squeeze out as much moisture as possible from the broccoli to help the croquettes hold together.
- Chill the mixture for 20 minutes before shaping if it’s too soft.
- Add a pinch of red pepper flakes for a little heat.
- Swap cheddar for mozzarella, Monterey Jack, or Gouda for a different flavor.
