This keto cheeseburger casserole is packed with seasoned ground beef, creamy cheese, and savory flavors—all without the carbs from a traditional bun. It’s an easy, family-friendly dinner that’s perfect for meal prep.
Ingredients
- 2 lb (900 g) ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp smoked paprika
- 1 tsp Italian seasoning
- 4 oz (115 g) cream cheese, softened
- ½ cup heavy cream
- 2 large eggs
- 2 tbsp sugar-free ketchup
- 1 tsp yellow mustard
- 2 cups shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 2 tbsp chopped dill pickles (optional)
- 1 tbsp chopped fresh parsley (for garnish)
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large skillet over medium-high heat, cook the ground beef until browned, breaking it up as it cooks.
- Add the diced onion and cook for 3–4 minutes until softened. Stir in the garlic and cook for another 30 seconds.
- Season with the salt, pepper, smoked paprika, and Italian seasoning.
- Reduce the heat to low and stir in the cream cheese until melted and fully combined.
- In a bowl, whisk together the heavy cream, eggs, sugar-free ketchup, and mustard.
- Spread the beef mixture evenly into the prepared baking dish. Pour the egg mixture over the top.
- Sprinkle with the cheddar and mozzarella cheeses.
- Bake for 20–25 minutes, or until the cheese is melted, bubbly, and lightly golden.
- Let the casserole rest for 5–10 minutes before serving. Garnish with chopped pickles and parsley if desired.
Tips
- Use 80/20 ground beef for the best flavor, draining excess grease if needed.
- Add cooked bacon or sautéed mushrooms for extra richness.
- For a spicy version, mix in diced jalapeños or a pinch of cayenne pepper.
- Freshly shredded cheese melts more smoothly than pre-shredded cheese.
