Ingredients
For the Fajitas
- 1½ lbs (680 g) boneless, skinless chicken breasts or thighs, sliced into thin strips
- 3 bell peppers (red, yellow, and green), thinly sliced
- 1 large onion, thinly sliced
- 2 tbsp olive oil
- 2 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
- Juice of 1 lime
For Serving
- 8 small flour or corn tortillas, warmed
- Sour cream
- Guacamole
- Salsa or pico de gallo
- Shredded cheddar or Mexican blend cheese
- Fresh cilantro
- Lime wedges
Instructions
- Preheat the air fryer to 380°F (193°C) for 3–5 minutes.
- In a large bowl, combine the chicken, bell peppers, and onion.
- Drizzle with olive oil and lime juice.
- Add the chili powder, smoked paprika, cumin, garlic powder, onion powder, oregano, salt, and black pepper. Toss until everything is evenly coated.
- Place the mixture in the air fryer basket in a single layer. Cook in batches if needed.
- Air fry for 12–15 minutes, shaking the basket or tossing the mixture halfway through cooking, until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender with lightly charred edges.
- Warm the tortillas during the last few minutes of cooking.
- Fill each tortilla with the chicken and vegetable mixture, then add your favorite toppings.
