Cheesy Sausage and Rice Casserole
Ingredients (Serves 4–6)

2 cups cooked rice (white, brown, or long-grain)

400 g (14 oz) sausage, sliced or crumbled (pork, chicken, or turkey)

1 small onion, diced
-
1 bell pepper, diced (optional)

2 cups shredded cheese (cheddar, mozzarella, or a mix)

1 can (300–400 g / 10–14 oz) cream of mushroom or chicken soup

½ cup milk
-
1 tsp garlic powder
-
1 tsp paprika
-
Salt and pepper to taste

2 tbsp olive oil or butter
🔹 Instructions
1️⃣ Cook the Sausage

Heat oil or butter in a skillet over medium heat.

Cook sausage until browned. Remove and set aside.

In the same skillet, sauté onion (and bell pepper if using) until soft.
2️⃣ Mix the Casserole

In a large bowl, combine cooked rice, sausage, sautéed onions/peppers, cream soup, milk, garlic powder, paprika, salt, and pepper.

Stir in 1½ cups of shredded cheese.
3️⃣ Assemble & Bake

Preheat oven to 180°C (350°F).

Transfer mixture to a greased baking dish.

Top with remaining cheese.

Bake 20–25 minutes until bubbly and golden on top.
4️⃣ Serve

Garnish with fresh parsley if desired.

Serve hot as a hearty weeknight meal.

For extra flavor, use smoked sausage or add a splash of hot sauce.
