Perfect Pan-Seared Duck Breast

Ingredients
- 2 duck breasts (6–8 oz / 170–225 g each)
- 1 tsp kosher salt
- ½ tsp freshly ground black pepper
- 1 tsp garlic powder (optional)
- 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
- 2 garlic cloves, lightly crushed
- 2 sprigs fresh rosemary or thyme
- 1 tbsp unsalted butter (optional)
Instructions
- Remove the duck breasts from the refrigerator 20–30 minutes before cooking.
- Pat the skin completely dry with paper towels.
- Using a sharp knife, score the skin in a crisscross pattern without cutting into the meat.
- Season both sides with salt, pepper, garlic powder, and thyme.
- Place the duck breasts skin-side down in a cold, dry skillet.
- Turn the heat to medium. As the pan heats, the fat will slowly render from the skin.
- Cook 8–10 minutes, pouring off excess rendered fat as needed, until the skin is deep golden and crispy.
- Flip the duck breasts and cook for:
- 3–4 minutes for medium-rare (130–135°F / 54–57°C)
- 4–5 minutes for medium (140–145°F / 60–63°C)
- During the last minute, add the butter, garlic, and rosemary or thyme. Spoon the melted butter over the duck.
- Transfer the duck to a cutting board and rest for 10 minutes before slicing.
Optional Sauce
Orange Honey Sauce
Combine in a small saucepan:
- ½ cup orange juice
- 1 tbsp honey
- 1 tsp Dijon mustard
- 1 tsp balsamic vinegar
- 1 tsp butter
Simmer for 5–7 minutes until slightly thickened, then drizzle over the sliced duck.
