- 1 cup (115 g) shredded mozzarella cheese
- ½ cup (120 g) mayonnaise
- 2 tablespoons grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ¼ teaspoon black pepper
- 2 tablespoons chopped fresh basil or parsley
Instructions
- Preheat the oven to 375°F (190°C).
- Bake the pie crust for 10 minutes (blind bake) until it begins to set. Let it cool slightly.
- Lay the tomato slices on paper towels, sprinkle lightly with salt, and let them sit for 15–20 minutes. Pat dry to remove excess moisture.
- Meanwhile, heat the olive oil in a skillet over medium heat and cook the onion for 6–8 minutes, until softened and lightly caramelized.
- In a bowl, combine the cheddar, mozzarella, mayonnaise, Parmesan, garlic powder, Italian seasoning, and black pepper.
- Layer half of the tomatoes in the pie crust, followed by half of the onions and half of the bacon. Repeat the layers.
- Spread the cheese mixture evenly over the top.
- Bake for 30–35 minutes, until the topping is golden brown and bubbling.
- Let the pie cool for 10–15 minutes before slicing.
- Garnish with fresh basil or parsley and serve warm.
