This Garlic Butter Steak is tender, juicy, and seared to perfection before being finished with a rich garlic herb butter. It’s a restaurant-quality meal that’s surprisingly easy to make at home.
Ingredients
For the Steak
- 2 ribeye, New York strip, or sirloin steaks (8–10 oz / 225–280 g each)
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika (optional)
Garlic Butter
- 4 tablespoons unsalted butter
- 4 garlic cloves, minced
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 1 tablespoon chopped fresh parsley
Instructions
- Remove the steaks from the refrigerator 30 minutes before cooking and pat them dry with paper towels.
- Season both sides with salt, pepper, garlic powder, and smoked paprika.
- Heat a large cast-iron skillet over medium-high heat until very hot. Add the olive oil.
- Sear the steaks for 3–4 minutes per side for medium-rare, adjusting the time to your preferred doneness.
- Reduce the heat to medium. Add the butter, garlic, rosemary, and thyme to the skillet.
- As the butter melts, tilt the pan slightly and use a spoon to continuously baste the steaks with the garlic butter for 1–2 minutes.
- Transfer the steaks to a cutting board and let them rest for 5–10 minutes.
- Spoon the remaining garlic butter over the steaks and sprinkle with fresh parsley before serving.
