These Air Fryer Zucchini Chips are crispy, golden, and full of flavor. Coated in a seasoned Parmesan breadcrumb crust, they’re a healthier alternative to potato chips and make a delicious snack, appetizer, or side dish.
Ingredients
- 2 medium zucchini, sliced into ¼-inch (6 mm) rounds
- 2 tablespoons olive oil
- ½ cup panko breadcrumbs
- ¼ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Cooking oil spray

Instructions
- Preheat the air fryer to 375°F (190°C) for 3 minutes.
- Pat the zucchini slices dry with paper towels to remove excess moisture.
- In a bowl, toss the zucchini slices with the olive oil.
- In a separate bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, Italian seasoning, salt, and black pepper.
- Press each zucchini slice into the breadcrumb mixture until evenly coated.
- Arrange the coated slices in a single layer in the air fryer basket, leaving space between each slice.
- Lightly spray the tops with cooking oil.
- Air fry for 8–10 minutes, flipping halfway through, until golden brown and crispy.
- Serve immediately with your favorite dipping sauce.
