Air Fryer Turkish Bread
This soft and fluffy Air Fryer Turkish Bread has a golden crust, a light, airy interior, and the signature diamond pattern found on traditional Turkish pide. It’s perfect for serving with dips, soups, grilled meats, or sandwiches.
Ingredients
- 2¼ teaspoons (7 g) active dry yeast
- 1 teaspoon granulated sugar
- ¾ cup (180 ml) warm water (110°F/43°C)
- 2 cups (250 g) bread flour or all-purpose flour
- 1 teaspoon salt
- 2 tablespoons olive oil
- 1 tablespoon plain yogurt (optional, for a softer crumb)
Topping
- 1 egg yolk
- 1 tablespoon milk
- 1 teaspoon olive oil
- 1 tablespoon sesame seeds
- 1 tablespoon nigella seeds (optional)
Instructions
- In a small bowl, combine the warm water, sugar, and yeast. Let stand for 5–10 minutes until foamy.
- In a large bowl, mix the flour and salt. Add the yeast mixture, olive oil, and yogurt (if using). Stir until a dough forms.
- Knead the dough for 8–10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover, and let it rise for 1 hour, or until doubled in size.
- Punch down the dough and shape it into a round or oval about ¾ inch (2 cm) thick, sized to fit your air fryer basket.
- Transfer the dough to a parchment-lined air fryer basket. Cover loosely and let it rest for 20 minutes.
- Mix the egg yolk, milk, and olive oil, then brush over the dough.
- Use your fingertips or the back of a knife to press a crisscross (diamond) pattern into the top. Sprinkle with sesame and nigella seeds.
- Preheat the air fryer to 340°F (170°C) for 3 minutes.
- Air fry for 12–15 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
- Cool on a wire rack for at least 10 minutes before slicing.

Tips
- If the top browns too quickly, loosely cover it with foil during the last few minutes of cooking.
- Bread flour gives a chewier texture, while all-purpose flour makes a softer loaf.
- Brush the hot bread with a little melted butter or olive oil for an extra-soft crust.
- Serve warm with hummus, olive oil and za’atar, butter, soups, kebabs, or use it for delicious sandwiches.
