Crispy Air Fryer Cheddar Stuffed Smashed Potatoes
These Crispy Air Fryer Cheddar Stuffed Smashed Potatoes are crispy on the outside, fluffy on the inside, and filled with gooey melted cheddar cheese. They’re an irresistible side dish or appetizer that’s easy to make and ready in under an hour.
Ingredients
- 1½ lb (680 g) baby Yukon Gold or baby red potatoes
- 4 oz (115 g) sharp cheddar cheese, cut into small cubes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried parsley or Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons grated Parmesan cheese (optional)
- Chopped fresh chives or parsley, for garnish

- Spicy mayo
Instructions
- Place the potatoes in a pot of salted water and bring to a boil. Cook for 15–20 minutes, or until fork-tender. Drain and let cool slightly.
- Preheat the air fryer to 400°F (200°C) for 3–5 minutes.
- Slice each potato halfway through, being careful not to cut all the way. Insert a cube of cheddar into the center, then gently close the potato around the cheese.
- Place the stuffed potatoes on a cutting board and gently smash each one with the bottom of a glass or measuring cup until about ½ inch thick.
- In a small bowl, mix the olive oil, garlic powder, onion powder, smoked paprika, parsley, salt, and black pepper.
- Brush both sides of the potatoes with the seasoned oil. Sprinkle with Parmesan, if using.
- Arrange the potatoes in a single layer in the air fryer basket.
- Air fry for 12–15 minutes, carefully flipping halfway through, until golden brown and crispy.
- Garnish with fresh chives or parsley and serve immediately while the cheese is hot and melty.
