Classic Beef Liver and Onions
Beef liver and onions is a traditional comfort food that’s rich in flavor and packed with nutrients. Soaking the liver in milk helps mellow its strong taste while keeping it tender.
Ingredients
- 1½ lb (680 g) beef liver, sliced
- 2 cups milk (for soaking)
- 2 large onions, thinly sliced
- ½ cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 3 tablespoons butter
- 2 tablespoons olive oil
- 1 teaspoon Worcestershire sauce (optional)
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Place the liver in a bowl and cover with the milk. Refrigerate for 30 minutes to 2 hours.
- Drain the liver and pat it completely dry with paper towels.
- In a shallow dish, combine the flour, garlic powder, paprika, salt, and black pepper.
- Dredge each piece of liver lightly in the seasoned flour, shaking off any excess.
- Heat 1 tablespoon of butter and the olive oil in a large skillet over medium heat.
- Add the onions and cook for 12–15 minutes, stirring occasionally, until soft and deeply caramelized. Remove from the skillet and keep warm.
- Add the remaining butter to the skillet. Cook the liver for 2–3 minutes per side, just until browned and the center is slightly pink. Avoid overcooking, as liver becomes tough.
- Return the onions to the skillet, drizzle with Worcestershire sauce if using, and cook for 1 minute.
- Garnish with fresh parsley and serve immediately.
