Air Fryer Muffins

These Air Fryer Muffins are soft, fluffy, and perfectly golden on top. They’re quick to make, bake beautifully in the air fryer, and can be customized with your favorite fruits, chocolate chips, or nuts. Perfect for breakfast, snacks, or lunchboxes!

Ingredients
- 2 cups (250 g) all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup (100 g) granulated sugar
- 1 large egg
- ½ cup (120 ml) milk
- ¼ cup (60 ml) vegetable oil or melted unsalted butter
- 1 teaspoon vanilla extract
Optional Mix-Ins
- 1 cup fresh or frozen blueberries
- ½ cup chocolate chips
- ½ cup diced strawberries
- ½ cup chopped walnuts or pecans
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon zest
Optional Topping
- Coarse sugar
- Streusel topping
- Sliced almonds
Instructions
- Preheat the air fryer to 320°F (160°C) for 3 minutes.
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, whisk together the egg, milk, oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
- Gently fold in your chosen mix-ins.
- Line silicone or paper muffin cups with batter, filling each about ⅔ full.
- Arrange the muffin cups in the air fryer basket, leaving space for air to circulate. Cook in batches if necessary.
- Air fry for 12–15 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the basket for 5 minutes, then transfer them to a wire rack to cool completely.
Flavor Variations
Blueberry
Fold in 1 cup fresh or frozen blueberries and 1 teaspoon lemon zest.
Chocolate Chip
Add ½ cup semi-sweet chocolate chips.
Cinnamon Streusel
Top with a mixture of 2 tablespoons brown sugar, 1 tablespoon flour, ½ teaspoon cinnamon, and 1 tablespoon cold butter before air frying.
Banana Nut
Replace the milk with 1 mashed ripe banana and fold in ½ cup chopped walnuts.
