Ingredients
For the Mojo Marinade
- ½ cup (120 ml) fresh orange juice
- ¼ cup (60 ml) fresh lime juice
- 2 tablespoons fresh lemon juice
- ⅓ cup (80 ml) olive oil
- 8 cloves garlic, minced
- 1 tablespoon chopped fresh oregano (or 1 teaspoon dried oregano)
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- ½ teaspoon crushed red pepper flakes (optional)
- 1 tablespoon chopped fresh cilantro
For the Chicken
- 2½ pounds (1.1 kg) bone-in, skin-on chicken thighs and drumsticks (or boneless chicken thighs)

Instructions
- In a large bowl, whisk together the orange juice, lime juice, lemon juice, olive oil, garlic, oregano, cumin, smoked paprika, salt, black pepper, red pepper flakes (if using), and cilantro.
- Add the chicken and coat it thoroughly in the marinade.
- Cover and refrigerate for 2–8 hours, turning the chicken once or twice if possible.
- Preheat the oven to 400°F (200°C) or prepare a grill for medium-high heat.
- Remove the chicken from the marinade and let any excess drip off. Discard the used marinade.
- For the oven: Arrange the chicken on a lightly greased baking dish or sheet pan. Bake for 35–40 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
- For the grill: Grill the chicken for 6–8 minutes per side, turning occasionally, until fully cooked.
- Let the chicken rest for 5 minutes before serving.
- Garnish with fresh cilantro, orange slices, and red onion, and serve with lime wedges.
