Ingredients
For the Toast
- 2 thick slices sourdough or artisan bread
- 1 ripe avocado
- 1 teaspoon lemon juice
- Salt and freshly ground black pepper, to taste
- 4 ounces (115 g) smoked salmon
For the Jammy Poached Eggs
- 2 large eggs
- 1 tablespoon white vinegar
- Water, for poaching
Toppings
- 1 tablespoon chopped fresh chives
- 1 tablespoon chopped fresh dill
- 1 teaspoon everything bagel seasoning (optional)
- ½ teaspoon red pepper flakes (optional)
- Lemon wedges, for serving
- Microgreens (optional)
Instructions
- Fill a medium saucepan with about 3 inches (7–8 cm) of water and bring it to a gentle simmer. Add the white vinegar.
- Crack each egg into a small bowl. Stir the simmering water gently to create a whirlpool, then carefully slide each egg into the center. Poach for 5–6 minutes for a jammy yolk. Remove with a slotted spoon and drain on paper towels.
- Meanwhile, toast the bread until golden and crisp.
- In a small bowl, mash the avocado with the lemon juice, a pinch of salt, and black pepper.
- Spread the mashed avocado evenly over each slice of toast.
- Layer the smoked salmon over the avocado.
- Place one poached egg on top of each toast.
- Sprinkle with chives, dill, and everything bagel seasoning, if using.
- Finish with red pepper flakes, microgreens, and a squeeze of fresh lemon juice, if desired.
- Serve immediately while the toast is crisp and the egg is warm.
