Ingredients
For the Grilled Chicken
- 4 boneless, skinless chicken breasts or thighs

- 1 teaspoon garlic powder

- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- 1 teaspoon salt

For the Vegetable Rice
- 1½ cups (300 g) long-grain white rice
- 3 cups (720 ml) chicken broth
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 small onion, finely diced
- 1 cup diced carrots
- 1 cup green peas
- ½ cup sweet corn kernels
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons chopped fresh parsley
For the Creamy Coleslaw
- 4 cups shredded green cabbage
- 1 cup shredded purple cabbage
- 1 cup shredded carrots
- ¼ cup mayonnaise
- 2 tablespoons plain Greek yogurt or sour cream
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and black pepper, to taste
Instructions
Grill the Chicken
- In a bowl, combine the olive oil, garlic, smoked paprika, garlic powder, onion powder, oregano, thyme, salt, pepper, and lemon juice.
- Coat the chicken with the marinade and let it rest for 20–30 minutes, if time allows.
- Grill over medium-high heat for 6–8 minutes per side, or until the internal temperature reaches 165°F (74°C). Let the chicken rest for 5 minutes before slicing.
Cook the Vegetable Rice
- Rinse the rice under cold water until the water runs clear.
- Heat the butter and olive oil in a saucepan over medium heat.
- Sauté the onion and carrots for 3–4 minutes.
- Add the garlic and cook for 30 seconds.
- Stir in the rice and cook for 2 minutes.
- Pour in the chicken broth, then add the peas, corn, bell pepper, salt, and black pepper.
- Bring to a boil, reduce the heat to low, cover, and simmer for 18–20 minutes, or until the rice is tender.
- Fluff with a fork and stir in the chopped parsley.
Prepare the Coleslaw
- In a large bowl, combine the green cabbage, purple cabbage, and carrots.
- In a separate bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, Dijon mustard, salt, and pepper.
- Pour the dressing over the vegetables and toss until evenly coated.
- Chill for 15 minutes before serving for the best flavor.
