Cook the rice:
In a medium saucepan, bring water to a boil. Add rice, reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed. -
Add milk and sugar:
Stir in milk, sugar, and salt. Cook over medium-low heat, stirring frequently, until thick and creamy (about 20β25 minutes). -
Optional egg step (for richer pudding):
Slowly stir a small amount of the hot rice mixture into the beaten egg to temper it. Then stir the egg mixture back into the saucepan. Cook 2β3 more minutes, stirring constantly. -
Finish:
Remove from heat. Stir in vanilla, butter, raisins (if using), and cinnamon. -
Serve:
Serve warm for a cozy treat or chill in the refrigerator for a thicker pudding. Sprinkle with extra cinnamon before serving if desired.
