Honey-Glazed Baby Carrots

Ingredients
- 1 pound (450 g) baby carrots
- 2 tablespoons unsalted butter
- 2 tablespoons honey
- 1 tablespoon brown sugar
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder (optional)
- ½ teaspoon dried thyme or 1 teaspoon fresh thyme leaves (optional)
- 1 tablespoon chopped fresh parsley, for garnish
Instructions
- Place the baby carrots in a large saucepan and cover with water. Bring to a boil over medium-high heat.
- Cook for 8–10 minutes, or until the carrots are just fork-tender. Drain well.
- Return the saucepan to medium heat and melt the butter.
- Stir in the honey, brown sugar, salt, black pepper, garlic powder, and thyme (if using). Cook for 1–2 minutes, stirring until the glaze is smooth.
- Add the cooked carrots to the pan and toss to coat evenly.
- Cook for 3–5 minutes, stirring occasionally, until the glaze thickens slightly and the carrots are glossy.
- Sprinkle with fresh parsley and serve immediately.
