Crispy Baked “Fried” Chicken

Ingredients
For the Chicken
- 2½–3 pounds chicken pieces (drumsticks, thighs, breasts, or wings)
- 2 cups buttermilk
- 1 teaspoon hot sauce (optional)
For the Coating
- 2 cups all-purpose flour
- 1 cup panko breadcrumbs
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon cayenne pepper (optional)
For Baking
- 2–3 tablespoons melted butter or olive oil cooking spray
Instructions
- In a large bowl, combine the buttermilk and hot sauce. Add the chicken, cover, and refrigerate for at least 30 minutes or up to 8 hours.
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or foil and place a wire rack on top. Lightly grease the rack.
- In a shallow dish, mix the flour, panko breadcrumbs, paprika, garlic powder, onion powder, oregano, thyme, salt, black pepper, and cayenne.
- Remove the chicken from the buttermilk, allowing the excess to drip off.
- Dredge each piece thoroughly in the seasoned coating, pressing gently so it sticks well.
- Arrange the chicken on the prepared wire rack, leaving space between each piece.
- Brush lightly with melted butter or spray generously with cooking spray.
- Bake for 40–45 minutes, turning the chicken halfway through cooking. Bake until the coating is golden brown and the chicken reaches an internal temperature of 165°F (74°C).
- Let the chicken rest for 5 minutes before serving.
