Ingredients
- 1 lb (450 g) ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet (1 oz/28 g) taco seasoning
- ½ cup water
- 1 can (10 oz/284 g) diced tomatoes with green chilies, drained
- 1 can (15 oz/425 g) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 3 cups crushed tortilla chips
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- ½ cup sour cream
- ¼ cup sliced black olives (optional)
- 2 tablespoons chopped fresh cilantro

Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large skillet over medium heat, cook the ground beef and onion until the beef is browned. Drain any excess grease.
- Add the garlic and cook for 30 seconds.
- Stir in the taco seasoning and water. Simmer for 2–3 minutes.
- Add the diced tomatoes, black beans, and corn. Cook for another 2 minutes.
- Spread half of the crushed tortilla chips in the baking dish.
- Spoon the beef mixture over the chips and spread evenly.
- Dollop the sour cream over the beef mixture and gently spread it.
- Sprinkle with 1 cup of cheddar and ½ cup of Monterey Jack cheese.
- Top with the remaining tortilla chips and the rest of the cheese.
- Bake for 20–25 minutes, until the cheese is melted, bubbly, and lightly golden.
- Let the casserole rest for 5 minutes, then garnish with cilantro and your favorite toppings.
