Cheesy Beef Rotel Dip
A warm, creamy, cheesy dip loaded with seasoned ground beef and Rotel tomatoes. It’s perfect for game day, parties, or a quick appetizer.

Ingredients
- 1 lb (450 g) lean ground beef
- 1 small onion, finely diced (optional)
- 2 cloves garlic, minced
- 1 (10 oz/284 g) can Rotel diced tomatoes with green chilies, undrained
- 1 (8 oz/225 g) block cream cheese, softened and cubed
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- ½ teaspoon chili powder
- ½ teaspoon smoked paprika
- ½ teaspoon ground cumin
- ¼ teaspoon black pepper
- Salt, to taste
- 2 tablespoons chopped fresh cilantro (optional)
- 1 sliced jalapeño (optional, for extra heat)
Instructions
- Heat a large skillet over medium heat. Add the ground beef and onion. Cook until the beef is browned and the onion is soft, about 6–8 minutes. Drain excess grease.
- Stir in the garlic and cook for 30 seconds until fragrant.
- Add the Rotel tomatoes (with the liquid), chili powder, smoked paprika, cumin, and black pepper. Simmer for 2–3 minutes.
- Reduce the heat to low. Stir in the cream cheese until completely melted and smooth.
- Add the cheddar and Monterey Jack cheeses a handful at a time, stirring until melted and creamy.
- Taste and adjust the seasoning with salt if needed.
- Garnish with cilantro and jalapeño slices, if desired.
Slow Cooker Method
- Brown the beef with the onion and garlic, then drain.
- Add the beef, Rotel, cream cheese, cheddar, Monterey Jack, and seasonings to a slow cooker.
- Cook on Low for 1½–2 hours, stirring every 30 minutes, until smooth and melted.
- Switch to the Warm setting for serving.
Air Fryer Option
The air fryer isn’t ideal for cooking dip from start to finish, but you can use it to melt everything together:
- Brown the beef on the stovetop first.
- Combine all ingredients in an oven-safe baking dish.
- Air fry at 320°F (160°C) for 8–10 minutes, stirring halfway through, until hot and bubbly.

Storage
- Refrigerator: Store in an airtight container for up to 4 days.

- Reheating: Warm gently on the stovetop or microwave in 30-second intervals, stirring frequently. Add a splash of milk if needed to restore a creamy consistency.
Tips
- For extra spice, use Hot Rotel or add diced jalapeños.
- Stir in ½ cup cooked crumbled sausage for even more flavor.
- Add a can of drained black beans or corn to make it heartier.
- Top with sliced green onions, diced tomatoes, or avocado just before serving.
