Slow Cooker Beef Stew
Tender chunks of beef, soft potatoes, and carrots simmer low and slow in a rich, savory broth for the ultimate comfort meal.

Ingredients
- 2 lbs (900 g) beef chuck roast, cut into 1½-inch cubes
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- 4 medium potatoes, peeled and cut into chunks
- 4 large carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 cup frozen peas (optional)
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Toss the beef with the flour, salt, and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Brown the beef on all sides, then transfer it to the slow cooker.
- In the same skillet, sauté the onion for 3–4 minutes. Add the garlic and cook for 30 seconds. Transfer to the slow cooker.
- Add the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves. Stir well.
- Add the potatoes, carrots, and celery.
- Cover and cook:
- Low: 8 hours
- High: 4–5 hours
- If using peas, stir them in during the last 15 minutes of cooking.
- Remove the bay leaves, taste, and adjust the seasoning with salt and pepper.
- Garnish with fresh parsley and serve hot.
