A rich, creamy chicken dish with Parmesan, garlic, and sun-dried tomatoes that’s perfect served over pasta, mashed potatoes, or rice.
Ingredients
- 2 lbs (900 g) boneless, skinless chicken breasts or thighs
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 3 cloves garlic, minced
- 1 cup (240 ml) low-sodium chicken broth
- 1 cup (240 ml) heavy cream
- ½ cup (50 g) grated Parmesan cheese
- ½ cup (80 g) chopped sun-dried tomatoes (drained if packed in oil)
- 1 tbsp butter
- 1 tbsp cornstarch + 2 tbsp cold water (optional, for thickening)
- Fresh basil or parsley, chopped (for garnish)
Instructions
- Season the chicken with salt, pepper, garlic powder, onion powder, and Italian seasoning.
- Place the chicken in the slow cooker.
- Add the minced garlic, chicken broth, butter, and sun-dried tomatoes.
- Cover and cook:
- Low: 5–6 hours
- High: 2½–3½ hours
- Remove the chicken to a plate.
- Stir the heavy cream and Parmesan into the sauce. If you’d like a thicker sauce, mix the cornstarch with cold water and stir it in. Cover and cook on High for 10–15 minutes until thickened.
- Return the chicken to the slow cooker and spoon the sauce over it. Let it warm through for 5 minutes.
- Garnish with fresh basil or parsley.
