Ingredients (Makes 1 Round Loaf)
Dough
- 3 cups (375 g) bread flour (or all-purpose flour)
- 2¼ teaspoons (1 packet) instant yeast
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 cup (240 ml) warm water (110°F/43°C)
- 2 tablespoons olive oil
- 2 tablespoons plain yogurt
Topping
- 1 egg yolk
- 1 tablespoon milk
- 1 teaspoon olive oil
- 1 tablespoon sesame seeds
- 1 tablespoon nigella seeds (optional)
Instructions
1. Make the Dough
- In a large bowl, combine the flour, yeast, sugar, and salt.
- Add the warm water, olive oil, and yogurt.
- Mix until a soft dough forms.
- Knead for 8–10 minutes until smooth and elastic.
2. First Rise
- Place the dough in a lightly oiled bowl.
- Cover and let rise for 1 hour, or until doubled in size.
3. Shape the Bread
- Gently punch down the dough.
- Shape it into a round loaf about 7–8 inches (18–20 cm) in diameter.
- Place it on parchment paper that fits your air fryer basket.
4. Second Rise
- Cover loosely and let the dough rise for 20–30 minutes.
5. Add the Topping
- Whisk together the egg yolk, milk, and olive oil.
- Brush over the top of the dough.
- Use your fingertips to gently press a crisscross pattern into the surface.
- Sprinkle with sesame seeds and nigella seeds.
6. Air Fry
- Preheat the air fryer to 320°F (160°C) for 3 minutes.
- Air fry for 15–18 minutes, or until the bread is golden brown and the internal temperature reaches 190–200°F (88–93°C).
- If the top browns too quickly, loosely cover it with foil for the last 5 minutes.
7. Cool
- Transfer the bread to a wire rack and let it cool for 10–15 minutes before slicing.
Serving Suggestions
- Butter and honey
- Hummus
- Tzatziki
- Olive oil and za’atar
- Grilled chicken or kebabs
- Soups and stews
Tips
- Bread flour gives a chewier texture, but all-purpose flour also works well.
- The yogurt helps keep the bread soft and tender.
- Avoid over-flouring the dough—it should be soft and slightly tacky.
- Every air fryer cooks differently, so begin checking for doneness after 14–15 minutes.
