Garlic Butter Steak Bites

Ingredients (Serves 4)
- 1½ lb (680 g) sirloin steak (or ribeye), cut into 1-inch cubes
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 5 cloves garlic, minced
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
- 1 tablespoon chopped fresh parsley
- 1 teaspoon Worcestershire sauce (optional)
- 1 tablespoon fresh lemon juice (optional)
Instructions
- Prepare the steak
- Pat the steak cubes dry with paper towels.
- Season with salt, pepper, paprika, and Italian seasoning.
- Heat the skillet
- Heat the olive oil in a large cast-iron skillet over medium-high heat until very hot.
- Sear the steak
- Add the steak cubes in a single layer without overcrowding the pan.
- Sear for 2–3 minutes without stirring to develop a deep brown crust.
- Turn and cook for another 1–2 minutes for medium-rare, or longer to your preferred doneness.
- Transfer the steak to a plate.
- Make the garlic butter
- Reduce the heat to medium.
- Add the butter to the skillet.
- Stir in the garlic and thyme, cooking for 30–60 seconds until fragrant.
- Finish
- Return the steak bites to the skillet.
- Toss to coat in the garlic butter.
- Stir in the Worcestershire sauce and lemon juice, if using.
- Sprinkle with chopped parsley.
- Serve
- Serve immediately with toothpicks as an appetizer or over mashed potatoes, rice, noodles, or roasted vegetables.
