One-Pan Garlic Herb Chicken, Baby Potatoes & Green Beans
This easy one-pan dinner combines juicy chicken, roasted baby potatoes, and crisp-tender green beans with garlic, herbs, and a touch of lemon. It’s a wholesome meal that’s perfect for busy weeknights.
Ingredients (Serves 4)
For the Chicken
- 4 boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
For the Vegetables
- 1½ lb (680 g) baby potatoes, halved
- 12 oz (340 g) fresh green beans, trimmed
- 2 tablespoons olive oil
- ½ teaspoon garlic powder
- ½ teaspoon dried thyme
- Salt and black pepper, to taste
For Finishing
- 2 tablespoons melted butter (optional)
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh parsley
- Lemon wedges, for serving
Instructions
- Preheat the oven
- Preheat to 400°F (200°C).
- Line a large baking sheet with parchment paper or lightly grease it.
- Season the chicken
- In a small bowl, combine the olive oil, garlic, Italian seasoning, paprika, garlic powder, onion powder, salt, and pepper.
- Rub the mixture evenly over the chicken.
- Prepare the vegetables
- Toss the potatoes with olive oil, garlic powder, thyme, salt, and pepper.
- Arrange them on one side of the baking sheet.
- Place the chicken in the center.
- Roast
- Bake for 20 minutes.
- Add the green beans
- Toss the green beans with a little olive oil, salt, and pepper.
- Add them to the baking sheet.
- Continue roasting for 15–20 minutes, or until the potatoes are tender and golden and the chicken reaches an internal temperature of 165°F (74°C).
- Finish
- Drizzle the melted butter (if using) and lemon juice over the chicken and vegetables.
- Sprinkle with fresh parsley.
- Serve
- Serve immediately with lemon wedges.

- Use chicken thighs for extra juicy, flavorful meat.
- Cut larger potatoes into even-sized pieces for uniform cooking.
- Add the green beans later so they stay crisp-tender.
- For extra browning, broil for the last 2–3 minutes, watching carefully.
