Easy 3-Ingredient Lemon Bars
These Easy 3-Ingredient Lemon Bars are bright, tangy, and wonderfully simple. Using a cake mix makes them quick to prepare with minimal effort.
Ingredients (Makes 12 Bars)
- 1 box (15.25 oz / 432 g) angel food cake mix
- 1 can (21 oz / 595 g) lemon pie filling
- Powdered sugar, for dusting (optional)
Note: Use angel food cake mix only. Regular cake mix will not produce the same light, fluffy texture.
Instructions
- Preheat the oven
- Preheat your oven to 350°F (175°C).
- Lightly grease or line a 9 x 13-inch baking pan with parchment paper.
- Mix
- In a large bowl, combine the angel food cake mix and the lemon pie filling.
- Stir just until well combined. The batter will be light and fluffy.
- Bake
- Spread the batter evenly into the prepared pan.
- Bake for 25–30 minutes, or until the top is lightly golden and the center is set.
- Cool
- Let the bars cool completely in the pan.
- Dust with powdered sugar, if desired.
- Serve
- Slice into squares and enjoy chilled or at room temperature.
Optional Variations
- Add 1 teaspoon vanilla extract for extra flavor.
- Fold in 1 tablespoon fresh lemon zest for a brighter citrus taste.
- Top with whipped cream and fresh berries before serving.
