3-Ingredient Onion Soup Meatballs & Potatoes
This easy 3-ingredient dinner is hearty, flavorful, and perfect for busy weeknights. Everything bakes together in one dish with almost no prep.
Ingredients (Serves 4)
- 1 (26–32 oz / 740–900 g) bag frozen fully cooked meatballs
- 1½ lb (680 g) baby potatoes, halved
- 1 packet (1 oz / 28 g) dry onion soup mix
Instructions
- Preheat the oven
- Preheat your oven to 400°F (200°C).
- Assemble
- Place the frozen meatballs and halved baby potatoes in a 9 × 13-inch baking dish.
- Sprinkle the dry onion soup mix evenly over everything.
- Toss to coat the meatballs and potatoes.
- Bake
- Cover the dish tightly with aluminum foil.
- Bake for 45 minutes.
- Remove the foil, stir, and bake for another 15–20 minutes, or until the potatoes are tender and lightly browned.
- Serve
- Serve hot with a side salad or steamed vegetables if desired.
Optional (Not Included in the 3 Ingredients)
- Drizzle with melted butter or olive oil before baking for richer flavor.
- Sprinkle with fresh parsley before serving.
- Top with shredded cheddar cheese during the last 5 minutes of baking.
