Russian Potato Salad (Olivier Salad)
Russian Potato Salad, also known as Olivier Salad, is a creamy, hearty salad made with potatoes, vegetables, eggs, and pickles. It’s perfect for picnics, holidays, or as a make-ahead side dish.
Ingredients (Serves 6)
- 4 medium potatoes, peeled and diced
- 2 medium carrots, peeled and diced
- 1 cup frozen peas
- 4 large eggs
- 1 cup cooked ham or chicken, diced (optional)
- 4 dill pickles, finely diced
- ½ small onion, finely chopped (optional)
- 1 cup mayonnaise
- 2 tablespoons sour cream (optional, for extra creaminess)
- 1 teaspoon Dijon mustard
- 1 tablespoon pickle juice (optional)
- 1 teaspoon salt, or to taste
- ½ teaspoon black pepper
- 2 tablespoons chopped fresh dill or parsley
Instructions
- Cook the vegetables
- Bring a large pot of salted water to a boil.
- Add the diced potatoes and carrots. Cook for 10–12 minutes, until just tender.
- Add the peas during the last 2 minutes of cooking.
- Drain well and let the vegetables cool completely.
- Cook the eggs
- Place the eggs in a saucepan and cover with cold water.
- Bring to a boil, then cover, remove from the heat, and let stand for 10–12 minutes.
- Cool in ice water, peel, and dice.
- Make the dressing
- In a large bowl, whisk together the mayonnaise, sour cream, Dijon mustard, pickle juice (if using), salt, and pepper.
- Assemble the salad
- Add the cooled potatoes, carrots, peas, diced eggs, ham or chicken (if using), pickles, and onion to the bowl.
- Gently fold everything together until evenly coated.
- Chill
- Cover and refrigerate for at least 1 hour to allow the flavors to blend.
- Serve
- Garnish with fresh dill or parsley before serving.
Tips
- Let the vegetables cool completely before mixing with the dressing to keep the salad creamy.
- Yukon Gold potatoes hold their shape well and have a buttery flavor.
- For a more traditional version, include diced bologna or cooked chicken.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
