KFC-Style Air Fryer Chicken

1 kg drumsticks and/or thighs (bone-in, skin-on)
Marinade

2 cups buttermilk
-
1 tsp salt
-
1 tsp black pepper
-
1 tsp paprika
KFC-Style Seasoned Coating

2 cups all-purpose flour
-
1 tbsp cornstarch
-
1 tsp salt
-
1 tsp black pepper
-
1 tsp paprika
-
1 tsp garlic powder
-
1 tsp onion powder
-
½ tsp dried thyme
-
½ tsp dried basil
-
½ tsp dried oregano
-
½ tsp mustard powder
-
½ tsp celery salt
-
½ tsp white pepper (key for KFC flavor)

½–1 tsp cayenne (optional)
Oil spray (neutral oil)
Instructions
1️⃣ Marinate

Mix buttermilk and seasonings.

Add chicken and marinate at least 2 hours (overnight = best flavor).
2️⃣ Coat

Combine all coating ingredients well.

Remove chicken from buttermilk (don’t wipe it dry).

Press firmly into flour mixture.

For extra crunch: dip back into buttermilk, then coat again (double dredge).

Let coated chicken rest 10–15 minutes to help the crust stick.
3️⃣ Air Fry

Preheat air fryer to 190°C (375°F).

Lightly spray basket with oil.

Place chicken in a single layer (don’t overcrowd).

Spray the top of chicken generously with oil (important for crisping).

Cook 25–30 minutes, flipping halfway, until golden and internal temp reaches 75°C (165°F).
If needed, add 3–5 extra minutes for deep golden color.
Air Fryer Secrets

Spray well — dry flour spots won’t crisp.

Smaller pieces cook more evenly.

Let chicken rest 5 minutes before serving to lock in juices.
