Ah, pilau! That’s a fragrant, spiced rice dish with roots in East African, Indian, and Middle Eastern cuisines. Here’s a classic beef pilau version that would pair beautifully with your honey-glazed steak or even as a standalone dish.
Ingredients
-
2 cups basmati rice, rinsed
-
400 g beef, cut into small cubes
-
2 tbsp vegetable oil
-
1 large onion, finely sliced
-
3 garlic cloves, minced
-
1 tsp ginger, grated
-
1 tsp cumin seeds
-
1 tsp cardamom pods
-
1–2 cloves
-
1 cinnamon stick
-
1 tsp turmeric
-
1 tsp ground coriander
-
1 tsp black pepper
-
Salt to taste
-
3–4 cups beef stock or water
-
Optional: 1 small chili, chopped for heat
-
Fresh coriander or parsley for garnish
Instructions
1. Sauté the aromatics
-
Heat oil in a large pot. Add cumin seeds, cardamom, cloves, and cinnamon stick. Fry until fragrant.
-
Add onions, garlic, and ginger. Sauté until golden.
2. Brown the beef
-
Add the beef cubes, season with salt, turmeric, coriander, and black pepper.
-
Brown the meat on all sides.
3. Cook the rice
-
Add rinsed rice and stir to coat it in the spices and oil.
-

4. Finish and serve
-
Fluff the rice gently with a fork.
-
Garnish with fresh coriander or parsley.
