Juicy Tomato Chicken
Ingredients

4 boneless, skinless chicken thighs or breasts

2 tbsp olive oil

Salt & pepper to taste

1 tsp paprika

1 small onion, finely chopped
-
3–4 garlic cloves, minced

1 can (400 g / 14 oz) diced tomatoes or crushed tomatoes

1 tsp dried oregano
-
1 tsp dried basil
-
½ tsp chili flakes (optional)

½ cup chicken broth or water
-
Fresh parsley or basil for garnish
Instructions
1️⃣ Sear the Chicken

Season chicken with salt, pepper, and paprika.

Heat olive oil in a skillet over medium-high heat.

Sear chicken 3–4 minutes per side until golden (it doesn’t need to be fully cooked).

Remove chicken and set aside.
2️⃣ Make the Tomato Sauce

In the same skillet, sauté onions until translucent.

Add garlic and cook 30 seconds.

Pour in tomatoes, chicken broth, oregano, basil, and chili flakes.

Simmer 5 minutes to let flavors combine.
3️⃣ Simmer the Chicken

Return chicken to the skillet, spooning some sauce over it.

Cover and simmer 15–20 minutes until chicken is cooked through and tender.

Adjust salt and pepper to taste.
4️⃣ Serve

Garnish with fresh parsley or basil.

Serve with rice, pasta, or crusty bread to soak up the sauce.
Tips for Juicy Chicken

Don’t overcook — simmer gently.

Sear first for flavor and color.

Using thighs keeps the meat extra juicy; breasts work but may need less simmering.
