Here’s a crispy, flavorful way to make Fried Chicken Gizzards — a Southern favorite that’s crunchy on the outside and tender inside
Fried Chicken Gizzards
Ingredients (Serves 3–4)
-
500 g (1 lb) chicken gizzards
-
2 cups buttermilk (or regular milk + 1 tbsp vinegar)
-
1 cup all-purpose flour
-
½ cup cornmeal (optional, for extra crunch)
-
1 tsp paprika
-
1 tsp garlic powder
-
1 tsp onion powder
-
½ tsp cayenne pepper (optional, for heat)
-
Salt & pepper to taste
-
Vegetable oil for frying
🔹 Instructions
1️⃣ Prep the Gizzards
-
Clean gizzards and trim excess fat.
-
Soak in buttermilk at least 2 hours (or overnight) — helps tenderize and add flavor.
2️⃣ Make the Coating
-
In a bowl, mix flour, cornmeal, paprika, garlic powder, onion powder, cayenne, salt, and pepper.
3️⃣ Coat & Fry
-
Drain gizzards from buttermilk.
-
Dredge in seasoned flour mixture, pressing lightly to coat.
-
Heat oil in a deep skillet or pot (about 175°C / 350°F).
-
Fry gizzards in batches 6–8 minutes, until golden brown and crispy.
-
Remove and drain on paper towels.
Tips
-
Tenderize: Boil gizzards 20–30 minutes in water with a little salt and spices before frying for extra tenderness.
-
Crispy: Don’t overcrowd the pan — fry in batches.
