Fried Alligator is a Southern-style delicacy—crispy on the outside, tender and slightly chewy inside, with a mild flavor often compared to chicken or fish.
Ingredients
- 500g (1 lb) alligator meat (usually tail meat, cut into bite-sized pieces)
- 1 cup buttermilk (or milk + 1 tbsp vinegar)
- 1 cup all-purpose flour
- ½ cup cornmeal (optional, for extra crunch)
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp cayenne pepper (optional)
- Salt & black pepper to taste
- Oil for deep frying
Instructions
1. Tenderize & marinate
- Place alligator pieces in buttermilk
- Let soak 1–2 hours (helps soften the meat)
2. Prepare coating
- Mix flour, cornmeal, and all spices in a bowl
3. Coat
- Remove gator pieces from buttermilk
- Dredge thoroughly in the flour mixture
4. Fry
- Heat oil to 175°C (350°F)
- Fry in batches for 3–5 minutes until golden brown
5. Drain & serve
- Place on paper towels
- Serve hot
Serving Ideas
- Lemon wedges
- Dipping sauces like remoulade, garlic mayo, or spicy aioli
Tips
- Don’t overcook—it gets tough quickly
- Keep pieces small and even for fast frying
- Double-dip (buttermilk → flour → buttermilk → flour) for extra crunch
Variations
- Cajun style: Add Cajun seasoning to the flour mix
- Air fryer version: Spray coated pieces with oil, cook at 200°C (400°F) for ~10–12 minutes
- Spicy: Add hot sauce to the buttermilk marinade
