Here’s a rich, comforting one-pan meal that pairs beautifully with fluffy steamed rice.
Creamy Chicken & Mushroom Skillet with Steamed Rice
Ingredients (Serves 4)
For the chicken & sauce:
-
4 boneless, skinless chicken breasts (or thighs)
-
2 tbsp olive oil or butter
-
8 oz mushrooms, sliced
-
3 cloves garlic, minced
-
1 small onion, finely diced
-
1 cup chicken broth
-
1 cup heavy cream
-
½ cup grated Parmesan cheese
-
1 tsp dried thyme (or 1 tbsp fresh)
-
½ tsp paprika
-
Salt & black pepper to taste
-
1 tbsp chopped fresh parsley (optional garnish)
For the rice:
-
1 cup long-grain white rice
-
2 cups water or chicken broth
-
½ tsp salt
Instructions
1️⃣ Cook the Rice
-
Rinse rice under cold water until water runs clear.
-
In a saucepan, bring water (or broth) and salt to a boil.
-
Add rice, reduce heat to low, cover, and simmer 15–18 minutes.
-
Remove from heat and let sit covered 5 minutes. Fluff with a fork.
2️⃣ Cook the Chicken
-
Season chicken with salt, pepper, and paprika.
-
Heat oil or butter in a large skillet over medium-high heat.
-
Sear chicken 4–5 minutes per side until golden.
-
Remove from skillet and set aside (it will finish cooking in the sauce).
3️⃣ Make the Creamy Mushroom Sauce
-
In the same skillet, add onions and cook 2–3 minutes until softened.
-
Add mushrooms and cook until browned and moisture evaporates (about 5–7 minutes).
-
Stir in garlic and thyme; cook 30 seconds until fragrant.
-
Pour in chicken broth, scraping up browned bits from the pan. Simmer 3–4 minutes.
-
Stir in heavy cream and Parmesan. Simmer until slightly thickened (5 minutes).
4️⃣ Finish the Dish
-
Return chicken to the skillet.
-
Spoon sauce over the chicken.
-
Simmer 5–10 minutes until chicken reaches 165°F (74°C) and sauce thickens.
Serve
-
Spoon creamy mushroom chicken over warm steamed rice.
-
Garnish with parsley and extra Parmesan if desired.
Optional Variations
-
Add spinach during the last 2 minutes for extra greens
-
Stir in 1 tsp Dijon mustard for depth
-
Use half-and-half instead of heavy cream for a lighter version
-
Add a splash of white wine before the broth for restaurant-style flavor
