A quick, fluffy coconut cake you can make in the microwave β perfect for a fast dessert fix!
π Ingredients (Single-Serve Mug Cake)

2 tablespoons shredded coconut (sweetened or unsweetened)

3 tablespoons milk (or coconut milk for extra flavor)

Mix dry ingredients
In a microwave-safe mug or small bowl, combine flour, sugar, shredded coconut, baking powder, and salt. -
Add wet ingredients
Stir in milk, melted butter (or oil), and vanilla. Mix until smooth with no lumps. -
Microwave
Cook on high for 60β90 seconds. The cake should rise and feel set in the center.

Cool slightly & enjoy
